potato

I think iv  not mentioned this before. Back in March i popped into a grow bag a couple of potatoes that had been lurking too long in my veg rack and had sprouted.. I wanted to see if i could get a crop from them.

While i was down at my lottie yesterday i noticed the foliage had died down, so i tipped them out and surprisingly there were quite a few [enough for two meals] small potatoes, around the size of a brussel sprout. I cooked them tonight in this recipe; And very nice it was too.
Warm Chicken & Potato Salad

  • 500g new / salad potatoes, cut into ½ cm slices
  • 1 tbsp balsamic vinegar
  • 3 tbsp extra virgin olive oil
  • 100g baby spinach
  • 4 cooked chicken breasts, sliced 400g
  • 100g cherry tomatoes, halved

Method Place the potatoes in a pan, cover with water and bring to the boil. Cook for 4-5 minutes. Drain, and toss in 2 tbsp oil. Fry potatoes in a frying pan for 6-7 minutes until soft and golden.
Add the vinegar, remaining oil and spinach and cook for a few moments until slightly wilted.

Stir in the chicken and tomatoes then serve
